Garlicky Potatoes and Carrots
A classic side dish, perfect for when root vegetables are in season.
Ingredients
- ~2lbs potatoes (any variety will do!)
- 6 tbsp rendered leaf lard OR 1/2 cup olive oil
- ~1 lb carrots
- 4 cloves finely chopped garlic
- fresh ground black pepper
- coarse salt
Directions
1. Preheat oven to 350°F (if using lard, place lard on roasting tin while preheating to soften)
2. Chop up potatoes and carrots to your desired size and mix with garlic on roasting pan
3. Place potatoes, carrots, and garlic on roasting pan and place in oven
4. Roast for 45 minutes, tossing occasionally
5. Add salt and pepper to taste
